1 large eggplant
1 cup Besan (gram flour)
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp cumin powder

1 tsp coriander powder
A pinch of asafoetida (hing)
Salt to taste
Water as required.
Oil for deep frying

Method:

Cut the eggplant into thin slices and soak them in cold water for 10-15 minutes.
In a bowl, mix together the besan (gram flour), turmeric powder, red chilli powder, cumin powder, coriander powder, asafoetida, and salt.
Add water to the bowl gradually and mix well until the batter has a smooth consistency. The batter should not be too thick or too thin.
Heat oil in a deep frying pan on medium heat.
Drain the eggplant slices and dip them into the batter, coating them well on both sides.
Once the oil is hot, gently drop the eggplant slices into the hot oil and deep fry until they turn golden brown and crispy on both sides. Fry the eggplant slices in batches so that they are not crowded in the pan.
Once the eggplant slices are cooked, remove them from the pan using a slotted spoon and place them on a plate lined with paper towels to remove excess oil.
Serve the hot and crispy Beguni with tomato ketchup or your favorite chutney.

Ingredients:

2 cup Besan (gram flour)
1 cup sugar
1 cup ghee (clarified butter)
1/2 cup milk
A pinch of cardamom powder

A pinch of salt
Chopped pistachios or almonds for garnishing

Method:

Heat a heavy-bottomed pan on low heat and add the ghee to it. Once the ghee is melted, add the besan (gram flour) to it and roast it on low heat for 12-15 minutes, stirring continuously. The besan should turn golden brown and fragrant.
In a separate pan, add the sugar and milk. Cook on medium heat until the sugar dissolves completely, stirring occasionally.
Add the cardamom powder and a pinch of salt to the sugar syrup. Mix well.
Once the besan is roasted, add the sugar syrup to the pan and mix well. Stir continuously until the mixture thickens and leaves the sides of the pan. This should take around 10-12 minutes.
Grease a plate or tray with ghee and pour the mixture onto it. Flatten it with a spatula or spoon, and allow it to cool for 10-15 minutes.
While the mixture is still slightly warm, cut it into small diamond-shaped pieces.
Garnish the besan barfi with chopped pistachios or almonds.
Allow the besan barfi to cool completely before removing it from the plate or tray.
Serve the besan barfi as a sweet dessert or snack.

Ingredients:

1/2 kg Bhindi (Okra)
1/2 cup Besan (gram flour)
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp cumin powder

1/2 tsp amchur (dry mango powder)
1/4 tsp turmeric powder
Salt, to taste
Oil, for cooking

Method:

Wash the bhindi (okra) and pat them dry with a towel. Cut off the ends and slice them
In a mixing bowl, add the besan, red chilli powder, coriander powder, cumin powder, amchur powder, turmeric powder, and salt. Mix well.
Add the sliced bhindi to the bowl and mix well, ensuring that the besan mixture coats the bhindi pieces evenly.
Heat oil in a non-stick pan on medium heat.
Add the besan-coated bhindi to the pan and spread them out evenly. Cook for 5-6 minutes, stirring occasionally, until the bhindi is cooked and crispy.
Serve hot with roti or rice as a side dish or snack.

1/2 cup oats, ground into a fine powder
1/2 cup water
1/4 cup chopped onion.
1/4 cup chopped tomatoes.
1/4 cup chopped capsicum (bell pepper)

1 green chilli finely chopped.
1/2 tsp ginger paste
1/4 tsp turmeric powder
1/2 tsp red chilli powder
Salt, to taste
Oil, for cooking

Method:

In a mixing bowl, combine the Besan, ground Oats, and water to form a smooth batter. The batter should have a pouring consistency, so adjust the water as needed.
Add the chopped onions, tomatoes, capsicum, green chilli, ginger paste, turmeric powder, red chilli powder, and salt to the batter. Mix well.
Heat a non-stick pan on medium heat. Spread a few drops of oil on the pan using a paper towel.
Pour a ladleful of the batter onto the pan and spread it evenly in a circular motion. Cook for 1-2 minutes until the bottom is golden brown and crispy.
Flip the chilla overusing a spatula and cook the other side for another minute.
Remove the chilla from the pan and place it on a plate. Repeat the process with the remaining batter to make more chilla.
Serve hot with mint chutney, tomato ketchup, or any other dip of your choice.

1/4 cup water

A pinch of nutmeg powder
A pinch of cardamom powder
Sliced pistachios or almonds for garnishing

Method:

Heat a heavy-bottomed pan on low heat and add the ghee to it. Once the ghee is melted, add the Besan (gram flour) to it and roast it on low heat for 10-12 minutes, stirring continuously. The Besan should turn golden brown and fragrant.
Add the milk to the pan and mix well. Stir continuously until the mixture thickens and leaves the sides of the pan. This should take around 8-10 minutes.
Add the powdered sugar, cardamom powder, and nutmeg powder to the pan. Mix well and cook for another 2-3 minutes until the mixture thickens further.
Remove the pan from heat and allow the mixture to cool slightly. Once the mixture has cooled, knead it well with your hands until it forms a smooth dough-like consistency.
Divide the mixture into small equal-sized balls and flatten them slightly to form peda shapes.
Garnish the Besan peda with sliced pistachios or almonds.
Allow the Besan peda to cool completely before serving.

1/4 cup chopped capsicum (bell pepper)
1 green chilli finely chopped

1/4 tsp turmeric powder
1/2 tsp red chilli powder
Salt, to taste
Bread slices
Butter, for toasting

Method:

In a mixing bowl, combine the Besan and water to form a smooth batter. The batter should have a pouring consistency, so adjust the water as needed.
Add the chopped onions, tomatoes, capsicum, green chilli, ginger paste, turmeric powder, red chilli powder, and salt to the batter. Mix well.
Heat a non-stick pan on medium heat.
Spread some butter on one side of a bread slice. Dip the buttered side of the bread slice into the Besan batter, making sure it is coated evenly on both sides.
Place the bread slice onto the pan, with the Besan-coated side facing down. Cook for 1-2 minutes until the bottom is golden brown and crispy.
Flip the bread slice over using a spatula and cook the other side for another minute.
Remove the Besan toast from the pan and place it on a plate. Repeat the process with the remaining bread slices and batter to make more Besan toasts.
Serve hot with ketchup or any other dip of your choice.
