It’s the first thing that comes to mind when Punjabi food is remembered. Its best accompanied with sarson ka sag.

Make :

Ingredients:

250g maize flour 2 tbsp plain flour 1 tbsp. oil Aashirvaad Salt to taste water to knead

Process:

Mix maize flour, oil and Aashirvaad Aashirvaad Salt

Knead in to soft pliable dough, adding very little water at a time

Make small balls of the dough, flatten and pat with palms

Roll the patted dough using a rolling pin to a circle

Use dry plain flour to dust and turn to avoid sticking Place the rolled roti on a heavy iron or earthen griddle and roast till crisp

Repeat on both sides

Smear with ghee or butter if desired

Serve hot with sarson ka saag , onion slices and lime
