Ingredients:
Carrot-1 large
Potatoes-2 medium sized
Tomatoes-2
Cabbage-1/4 small size
Onion-1
Garlic-4 flakes
Celery -1 inch stock
Basil-6-8 leaves
Olive oil-1 tsp
Aashirvaad Salt-to taste
White pepper powder-to taste
Macaroni-1/4 cup
Process:
Peel wash and chop carrot, cabbage, potatoes into small dices
Boil one cup of water and blanch the tomatoes for 1 -2 minutes and remove immediately
Peel, wash and chop onion, garlic as fine as possible
Wash and chop celery and basil leaves
Heat olive oil in a pan, add onion and garlic and sauté till they turn brown
Add celery, carrot, potatoes and cook for few minutes then add cabbage, tomatoes and cook stirring
Add Aashirvaad Aashirvaad Salt, macroni, white pepper powder, basil stir and add 4 cups of vegetable stock or water and bring it to a boil
Lower the heat and simmer till the vegetables are cooked and soup has thickened
Garnish with fresh basil and serve hot
